Creamy Macaroni & Cheese

Serves: 4-6

 

Ingredients:

4 cups Medium elbow macaroni, uncooked

3 tbsp flour

1 tsp salt

1/4 tsp freshly ground black pepper

2 1/4 cups fat-free milk

1/4 cup (2 oz) reduced fat cream cheese, softened

2 tsp dijon mustard

2 tsp Worcestersire sauce

1/2 tsp bottled minced garlic

1 1/4 cups shredded reduced-fat cheddar cheese

 

Directions:

1. Cook pasta according to package directions.  Meanwhile:

2. combine flour, salt, and pepper in large saucepan over medium-high heat.  Add milk; whisk.  Spoon in cream cheese into milk mixture and bring to a boil, stirring constantly. 

3. Reduce heat; simmer 2 minutes or until thick and cream cheese melts, stirring occasionally.  Stir in mustard, worcestersire sauce and garlic; simmer 1 minute.  Remove from heat.

4. Add cheddar cheese, stirring until cheese melts.  Combine pasta and cheese sauce in a large bowl; toss well.
