Easy Egg Omelet

Cooking time: 8 minutes Makes 1 Omelet
Ingredients:
2/3 cup egg whites (such as egg beaters egg whites)
1 cup baby spinach
2 tbsp sweetened red bell peppers
¼ cup chopped red onion
1 tbsp minced garlic
2 tbsp green chili
2 strips bacon (or Turkey bacon), diced
Salt and Pepper to taste
Cheese to sprinkle (any kind you like)
Cooking spray (Canola Oil)
Directions:
1. Coat small frying pan with cooking spray. On medium-high heat, sauté onion for 1 minute. Add garlic, peppers, salt, green chili and bacon; cook for 1 minute, stirring once.
2. Pour egg white over mixture in pan. Add pepper. Cook on medium-high heat for 5 minutes. Lifting sides of egg mixture to allow uncooked portion to flow underneath. Add spinach and reduce heat to medium-low; cook for 1 minute.
3. Sprinkle cheese on mixture. Using spatula, fold over half of egg mixture onto the other half. Sprinkle additional cheese on top. Serve and enjoy!
