Flaky Date Scones
Ingredients:
1 1/4 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
2 Tbsp sugar
6 Tbsp sweet, unsalted butter, cold
2 large eggs, lightly beaten
1/3 cup whole milk
1/2 cup chopped, pitted dates
¼ teaspoon ground cinnamon
2 tbsp finely chopped walnuts, (optional)
Instructions:
In a bowl, mix flour, baking powder, salt, 1 Tbsp sugar, and butter until mixture resembles crumbs. Beat the eggs; setting aside 1 tablespoon full. Add milk, dates, walnuts (optional) and eggs to flour mixture; stir until dough is formed.
On a lightly floured surface, roll dough into a 9x6 rectangle about 1/2 inches thick. With a floured knife, cut into 3 inch squares and then again into triangles.
Place these about an inch apart on a greased cookie sheet. Brush with reserved egg and sprinkle with cinnamon and remaining sugar. Bake, at 400 degrees, for 12 minutes until golden brown. Serve hot and enjoy.
