Fresh Hearty Minestrone Soup Low Fat and Fast

Serves: 8

 

Ingredients:

3 14 oz cans beef broth

1 – 15 oz can kidney beans, drained

1 – 15 oz can garbonzo beans, drained

1 – 15 oz can black eyed peas, drained

2 – 14 oz cans stewed tomatoes, undrained

1 – 11.5 oz can vegetable juice

2 – 6 oz cans tomato paste

2 tsp sugar

1 tbsp Italian seasoning

1 pkg dried mushroom and onion seasoning

4 cups fresh spinach, chopped

3 cups cooked pasta, Rotini

1 cup green chiles (canned with juice)

2 tbsp minced garlic

Cheese (optional for topping)

1 28 oz bag frozen mixed veggies

 

Directions:

1.       In a 4 quart dutch oven, combine broth, beans, peas, stewed tomatoes, vegetable juice, tomato paste, sugar, Italian and mushroom seasonings, garlic and chilies.

2.       Bring to a boil

3.       Add vegetables, reduce heat and simmer

4.       Meanwhile, cook pasta. Add pasta and fresh spinach to soup. Heat through.

If desired, sprinkle with cheese, serve and enjoy!
