Fresh Tomato and Basil Pasta

Fresh Tomato & Basil Pasta

Serves: 6

 

Ingredients:

6 cups (12 oz) Rotini

3 tbsp extra-virgin olive oil

1 tbsp minced garlic

2 cups chopped roma tomatoes

1/3 cup chopped fresh basil

1/4 cup Feta cheese

1/4 tsp Freshly ground black pepper

1 - 8oz cans tomato paste

1 - 14oz can fire roasted canned tomatoes or favorite pasta sauce

 

Directions:

1. Cook pasta according to package directions.  Meanwhile:

2. Heat oil over medium heat in Dutch oven.  Add garlic and saute for 1 minute.  Add tomatoes and cook for an additional 2 minutes.  Remove from heat.

3.  Add pasta to dutch oven; gently mix in pepper, tomato paste, canned tomatoes and basil. 

4. Arrange on plate and top with Feta cheese.
