Green Chili French Onion Soup

Cooking time: 30 minutes      Serves: 4-6

 

Ingredients:

1 medium yellow onion, thinly sliced

1 medium red onion, thinly sliced

1 tsp sugar

4 cups beef broth

2 tsp Worcestershire sauce

Freshly ground black pepper

Swiss/Cheddar Cheese (enough to sprinkle)

EVOO

1 – 4 oz can green Chili

1 green chili cheese bagel OR 2 slices bread (such as French bread)

Dash of Garlic powder

 

Directions:

1.       In pan, cook onion in sugar and butter, covered for 10 minutes or until tender golden brown. Stir in beef broth, Worcestershire sauce, pepper and green chili. Bring to boiling; reduce heat and simmer, covered for 10 minutes.

2.       Pull apart bagel or Bread; arrange pieces flat on baking pan. Drizzle EVOO over crumbs (about 1 tbsp), and sprinkle garlic powder. Broil, in oven, for 1 min or until crisp. Remove from heat and sprinkle cheese over crumbs. Allow to melt.
