Green Chili Spicy Hash Browns

Cooking Time: 35 minutes

 

Ingredients:

¼ cup green chili

1 tbsp canola oil

3 minced garlic cloves

1 – 4 oz pkg frozen hash browns

½ tsp salt and ½ tsp pepper

½ tsp chipotle chile powder

¼ tsp ground red pepper

1 tbsp red wine vinaigrette

2 tbsp honey

½ cup fresh orange juice

½ tbsp EVOO

About 15 small mushroom caps

 

Directions:

1.       In a bowl, combined mushroom caps, vinegar, honey, orange juice, EVOO and salt & pepper. Let stand for 20 minutes.

2.       Meanwhile, in pan, sauté onions in canola oil for 3 minutes. Add garlic and cook for another minute. Add shredded Hash Browns and cook for 15 minutes. Mix in green chili, chile powder and ground red pepper and cook for an additional 15 minutes.

3.       Drain mushroom mixture and add mushrooms in with hash browns.
