Hearty Chicken Noodle Soup
Serves: 4 Cook time: 35 minutes
Ingredients:
Cooking Spray
1 cup ( ¼ inch thick) slices carrot
1 cup frozen corn
1 14 oz can fire roasted tomatoes, undrained
¾ cup chopped onion
4 garlic cloves, minced
1 cup ( ¼ inch thick) slices celery
¼ tsp salt
¼ tsp freshly ground black pepper
8 cups fat-free, less-sodium, chicken broth
2 cups uncooked egg noodles
1 tbsp low-sodium soy sauce
1 bay leaf
3 cups shredded cooked chicken
Coarsely ground black pepper for seasoning
Directions:
1. Heat a large saucepan over medium-high heat; coat with cooking spray. Add carrot, corn, onion, and garlic; sauté 5 minutes or until onion is lightly browned. Add tomatoes, celery, salt & pepper; sauté 3 minutes. Add broth and next three ingredients; bring to a boil. Reduce heat, and simmer 5 minutes. Add Chicken and cook an additional 3 minutes. Discard bay leaf. Sprinkle with coarsely ground black pepper if desired.
