Margherita Pizza

A fast easy fix for dinner, that's delicous too!

 

Ingredients:

1 - 10oz can refrigerated pizza crust dough

Cooking spray

1 tsp extra virgin olive oil

1 garlic clove, minced

5 roma tomatoes, thinly sliced

1 cup shredded fresh mozzarella cheese (about 4oz)

1 tspbalsamic vinegar

1 - 6oz can tomato paste

1/2 cup fresh basil, thinly sliced

1 tsp Freshly ground black pepper

 

Directions:

1. Preheat oven to 400

2. Unroll dough onto a baking sheet coated with cooking spray (shape to rectangle).  Bake at 400 for 8 minutes.  Remove crust from oven; brush with 1/2 tsp oil.

3. In a small bowl, mix together tomato paste and garlic.  Spread over crust.  Arrange tomato slices on crust, leaving a 1/2-inch border; sprinkle evenly with cheese.  Bake at 400 for 12 minutes or until cheese melts and crust is golden.

4. Combine 1/2 tsp oil and vinegar; stir with a whisk.

5. Sprinkle pizza evenly with sliced basil and pepper.  Drizzle vinegar mixture evenly over pizza.  Place pizza back in oven for 30 seconds (enough to wilt basil slices).  Slice pizza and serve!
