Oklahoma Earth Cake
From the Kitchen of Peggy Walton
½ cup margarine
1 ½ cups sugar
2 eggs
1. Cream margarine and sugar, add eggs one at a time and mix
2 cups flour
1 tbsp cocoa
1 tsp salt
2. Sift above dry ingredients and add to the creamed mixture, alternately with liquids below:
1 cup buttermilk
1 tsp baking soda
2 tbsp hot water with 1 heaping tsp coffee
1 tsp red food color
3. Mix well and bake in greased and floured 13x9” pan for 34 minutes at 350.
Icing:
½ cup butter or margarine
1 cup chopped nuts
1. Roast butter and nuts in 350 oven for 10 minutes, cool, then add:
1 box sifted powdered sugar
1/3 cup half & half (or milk)
½ tsp vanilla
2. Add half & half slowly until icing is right consistency, spread over warm cake.
