Spinach Breakfast Pie

Serves 4-6
Ingredients:
1 recipe pie crust (or use premade pie crust)
½ cup chopped red onion
6 slices turkey bacon, chopped
16oz egg whites (or 8 eggs)
½ skim milk
16 oz pkg frozen spinach
½ cup mozzarella cheese
½ cup ricotta cheese, part skim milk
½ cup swiss & cheddar cheese
1/3 cup sweetened red bell peppers
Dash of nutmeg
Salt and pepper to taste
Directions:
1. Prepare pie crust or use premade pie crust.
2. Preheat oven to 450 and bake crust for 8 minutes, covered with foil. Remove foil and bake 5 minutes more. Remove from oven and reduce heat to 325.
3. In a large skillet, cook onion and bacon until tender/crisp. Place in a bowl.
4. In a mixing bowl, combine egg whites, milk, salt, pepper and nutmeg. Stir in ricotta, mozzarella, and swiss/cheddar cheese. Add onion and bacon to cheese mixture, and mix well.
5. Pour mixture into the hot baked crust. Bake in the oven at 325 for 45-50 minutes until knife inserted comes out clean. Let pie stand for 10 minutes before serving.
Tip – if making this dish for guests in the morning, get up early to combine the ingredients. While the pie is baking, get ready. When you’re done getting ready, the pie will be done as well!
