Sweet Potato Casserole
From the kitchen of Peggy Walton
Ingredients:
3 cups cooked, mashed sweet potatoes
6 tbsp. butter or margarine
1 cup canned milk
1 ½ cups sugar
2 eggs
½ tsp of each: nutmeg, cinnamon & vanilla
Directions:
1. Mix together and bake in shallow casserole dish at 425 for 15 minutes.
2. While baking prepare topping:
1 cup crushed cornflakes
½ cup brown sugar
½ cup finely chopped nuts
½ cup melted butter or margarine
3. Spread over hot potato mixture and bake for 15 minutes at 400 degrees. Guaranteed to be a crowd pleasure next Thanksgiving
