Zucchini Crisps
From the Kitchen of Aubrey Proctor
Ingredients:
Crisco cooking spray
1 tbsp EVOO
2 medium zucchini (1 lb)
¼ cup freshly grated parmesan cheese (3/4 oz)
¼ cup plain dry bread crumbs
1/8 tsp salt
Fresh Ground Pepper
Directions:
1. Preheat oven to 450
2. Coat baking sheet with cooking spray
3. Slice zucchini in ¼ inch thick rounds. In a medium bowl, toss zucchini with oil. In a separate bowl, combine the parmesan cheese, bread, salt and pepper.
4. Dip zucchini slices in cheese mixture to coat each side.
5. Bake in oven for 25-30 minutes, or until browned and crisp.
