Not everything can be ready at the snap of a finger. We often rush so many things in the kitchen, softening butter is one of them. You read over the part of the recipe that says, let butter stand at room temperature for 30 minutes and you pull it from the refrigerator and toss it in the microwave. After all, there’s nothing a microwave can’t thaw or melt… If you have runny cookies or cakes that have lost their fluffiness, you might have rushed the process. Over softened butter will cause cookies to run and lose their shape, and you won’t be able to cream properly with sugar to create fluffy cakes with a delicate crumb. So slow it down, it’s not a baton, it’s a stick of butter.
