Minty Ice Tea

Total Time: 15 minutes   Serves: 8

Flavored with fresh mint and lime juice, this refreshing tea is well-suited to accompany almost any type of food.

 

Ingredients:

 

  • 8 cup(s) cold water
  • 8 tea bags, tags removed
  • 8 sprig(s) fresh mint, plus additional for serving
  • 1/4 cup(s) fresh lime juice, (from 2 to 3 limes)
  • Ice cubes
  • Superfine sugar, (optional)

Directions

  1. In covered 3-quart saucepan, heat 4 cups water to boiling over high heat. Remove from heat; stir in tea bags and mint. Cover and let steep 5 minutes.
  2. Stir tea; remove tea bags and mint. Into large pitcher with tight-fitting lid, pour tea, lime juice, and remaining 4 cups water. Makes 6 1/2 cups. Cover and let stand until ready to serve or overnight. (Do not refrigerate or tea will become cloudy. If this happens, add up to 1 cup boiling water, gradually, stirring until tea clears.) Serve over ice with mint, and sugar if you like.

Tips & Techniques

Superfine sugar is a finer version of granulated sugar. Although it's available at most supermarkets, you can make your own by pulsing granulated sugar in a blender or processor until the crystals are more powder-like. Confectioners' sugar (which contains some cornstarch) is not a good substitute.
