Mistake: Your Gravy is Lumpy

You know it’s bad when guests are wondering what’s floating in their gravy. Nobody likes lumpy gravy, in fact, I can’t think of any positive description with the word lumpy in it? Instead of playing the mystery game for dinner, make these easy changes: don’t add broth too quickly into a roux, this will create that gooey layer on the bottom of the pan. For starch-based gravy, add the thickener gradually into the hot liquid so it has time to thicken (not ‘clumpen’). Use a whisk when adding the thickener or flour to the broth and keep stirring until the gravy comes together.
