Muffin Sliders

Mix it up with these three varieties or choose one.  Either way, its simple and so good.

Bacon-and-Cheddar Corn Muffins 

Makes 1 Dozen  |  Hands-on Time: 22 minutes  |  Total Time: 52 minutes

 

Note:Heating the pan beforehand results in a nice crispy bottom

Ingredients:

  • 6 bacon slices (I use applewood smoked bacon)
  • 2 cups self-rising white cornmeal mix
  • 1 tbsp. sugar
  • 1 1/2 cups buttermilk
  • 1 large egg
  • 4 tbsp. butter, melted
  • 1 cup (4oz) shredded sharp cheddar cheese
  • Cooking Spray
  • Scrambled Eggs (see recipe below)

Directions:

1. Preheat oven to 425 degrees.  Cook bacon in a large skillet over medium high heat 12-14 minutes or until crisp; remove bacon, and drain on paper towels. Crumble bacon.

2.  Heat a 12-cup muffin pan in oven 5 minutes.

3.  Combine cornmeal mix and sugar in a medium bowl; make a well in center of mixture.

4. Stir together buttermilk and egg; add to cornmeal mixture, stirring just until dry ingredients are moistened.  Stir in melted butter, cheese and bacon.  Remove pan from oven, and coat with cooking spray.  Spoon batter into hot muffin pan, filling it full.

5. Bake at 425 for 15 to 20 minutes or until golden.  Remove from pan to a wire rack, and let cool 10 minutes.  (Continue with directions for scrambled eggs) 

 

Scrambled Eggs

Ingredients:

  • 8 large eggs
  • 1 tbsp water
  • 2 tbsp milk
  • 1 tsp. creole seasoning

Directions:

1. Whisk all ingredients together in bowl.  Heat a large non-stick skillet over medium heat and add egg mixture, and cook, without stirring, 2 to 3 minutes or until eggs begin to set on bottom.  Gently draw cooked edges away from sides of pan to form large pieces.  Cook stirring occasionally, 4-5 minutes or until eggs are thickened and moist.  (Do not overstir.)  

2. Cut muffins in half, and spoon eggs over bottom halves.  Cover with top halves of muffins.

 

Green Chili & Pepper Jack Cheese Muffin Sliders

Directions:

Omit bacon, substitute Pepper Jack Cheese for Cheddar Cheese.  Proceed as directed stirring in 1 (4.5oz) can chopped green chiles, drained, with cheese and butter.  Bake as directed above and continue with Scrambled Egg directions.

 

Peppered Muffin Sliders

Directions:

Prepare recipe as directed omitting bacon and cheese and adding 1-2 tsp. Peppercorn Medley (or to taste).  Continue baking and Scrambling Eggs as directed above.

 

You can also try this with Swiss Cheese & Ham, Turkey Bacon instead of Bacon, or adding any of the following: Spinach, onion, peppers, garlic, etc.  Have fun and enjoy!
