Makes 8-10 servings | Bake: 50 minutes
Note: to speed things up in the morning, get a head start and prepare the meatloaf the night before and bake it in the morning.
Meatloaf Ingredients:
- 1 lb. lean ground sirloin
- 1 lb. ground pork sausage
- 1 sleeve multigrain saltine crackers, crushed
- 1 (15 oz) can tomato sauce
- 1 green bell pepper
- 1/2 cup diced red onion
- 2 large eggs, lightly beaten
- 1/3 cup chopped fresh mushrooms
- 1 tbsp. worcestershire suace
- 1/2 tsp. freshly ground pepper
- 2 tbsp. light brown sugar
Gravy:
- 1 1/2 tbsp. butter
- 1 tbsp. all-purpose flour
- 1/2 cup chicken broth
- 1/4 tsp. salt
- 1 tsp. freshly ground pepper
- 1/4 tsp fresh lemon juice
Remaining Ingredients:
- 8 slices pumpernickel bread (or substitute with hash browns)
- 8 large eggs (or cut down to the amount you will be serving, 1 egg per serving)
- 8 thick tomato slices
- 4 tbs. mayonnaise
- Chopped fresh parsley
- 8 bacon slices, cut in half
Directions:
1. Prepare Meatloaf: Preheat oven to 350 degrees. Combine all meatloaf ingredients in large bowl. Prepare 2 muffin pans by either lining them with foil or coating with non-stick spray. (You can also make in 2 loafpans and cut the meatloaf into individual serving sizes)
2. Bake meatloaf for 50 minutes or until meat thermonmeter inserted in center registers 155 degrees. Let cool for 10 minutes.
3. Meanwhile, prepare Gravy: Melt butter in a saucepan over medium heat. Whisk in flour until smooth. Slowly whisk in broth. Reduce heat to medium-low, and simmer, whisking constantly 2 minutes or until slightly thickened. Stir in 1/4 tsp. salt, 1 tsp. pepper, and 1/4 tsp. lemon juice. Set aside.
4. Cook bacon in a large skillet over medium heat, 8-10 minutes until just crispy. Remove bacon, nd drain on paper towels.
5. In the same skillet, over medium heat, gently break 4 eggs into skillet. Cover & Cook 2-3 minutes to desired degree of doneness. Remove and repeat procedure with remaining 4 eggs.
6. Toast bread slices. Spread mayonnaise on bread. Next, top with a few slices of bacon, sliced tomato, meatloaf and one egg. Drizzle with gravy and garnish with fresh parsely.
